Before the iconic wood-fired ovens became a Montreal institution, there was Chaim (Hyman) Seligman. Born in the late 1800s in Russia, Seligman arrived in Canada around the turn of the century, setting down roots just off Boulevard Saint-Laurent—The Main. Widely credited with establishing the city’s very first bagel bakery, delivering hot, fresh bagels through city streets by horse and wagon, strung together by the dozen in the traditional Russian style.
